What You’ll Need (Serves 2–3)

  • 1¼ cups all-purpose flour

  • 2 large eggs

  • 1 tsp olive oil

  • Edible flowers and herbs (violas, pansies, nasturtiums, chive blossoms, basil, dill, etc.)

  • Extra flour for dusting

  • Pasta machine

  • Sharp knife or pasta cutter

  • Clean kitchen towel

  • Large pot of boiling water + kosher salt

Step-by-Step Instructions

1. Make the Dough
On a clean surface, mound your flour and make a well in the center. Crack in the eggs, add the olive oil, and gently mix with a fork. Once the dough comes together, knead for about 10 minutes until smooth and elastic. Wrap in plastic and let rest for 30–45 minutes.

2. Prep the Flowers and Herbs
Rinse and dry your edible flowers. Flatten them gently between paper towels or under a book to keep their shape.

3. Roll It Out
Cut the dough in half. Using a pasta machine, roll one half through the widest setting several times, folding it in half each time until smooth. Gradually roll it thinner, one setting at a time, until it's about 1 mm thick.

4. Add the Florals
Lay one sheet of dough flat and arrange your flowers and herbs on one side. Fold the other half over the top to sandwich the florals. 

5. Run the sheet back through the pasta machine once or twice to seal everything in.
Start on a slightly wider setting than your final thickness to avoid tearing the dough. This helps press the flowers and herbs firmly between the two layers, flattening and embedding them into the surface.

6. Cut the Pasta
Using a knife or pasta cutter, slice the sheet into fettuccine, pappardelle, or your shape of choice. Dust with flour and set aside.

7. Boil and Serve
Bring a large pot of salted water to a boil. Cook the pasta for 2–3 minutes until tender. Toss with olive oil, butter, or a light lemon cream sauce. Top with more fresh flowers
