Trailblazing winemaker Ondine Chattan lends her thoughts on her career, her love of the land and the people who farm it, wine style, and what she calls “convivial cuisine”.
Q&A with Ondine
How did you get into winemaking? I studied viticulture and plant science at Cal Poly in San Luis Obispo then took my first job after college at Cline Cellars where I confirmed my interests leaned more to the winery/winemaking side than the viticulture side. I worked there for two years before leaving to pursue an MS in Enology at Fresno State. My research and experiences there led me to an exciting career as a winemaker.
What do you love about your job? Most every aspect is appealing but by far my favorite is being so closely connected to the seasons through the plant growth cycle. I take great satisfaction in being tied to the earth, paying close attention to the unique growing conditions of each year and then striving to interpret that through my winemaking. The scenery in Sonoma is spectacular and I get to drive the backroads and meet with wonderful people who farm the land.
How would you describe Angels & Cowboys Rosé? This is a wine for everyone and most every occasion. The color and structure are delicate, and the interplay of fruit, mineral, and savory notes makes it a natural partner to what I like to think of as 'convivial cuisine'. We manage every aspect of vine growth and winemaking to create a harmonious wine that delivers crisp acidity, refreshing fruitiness, and grounding/balancing savory sea spray on the finish. I love that our rose is embraced by a broad range of consumers- from those looking for an easy sipping wine to those seeking to enhance the enjoyment of a meal.
What foods or occasions do you like to enjoy it with? As mentioned above, I think of this as a partner to 'convivial cuisine'- any type of cuisine that brings people together on an odyssey of flavor and discovery such as Tapas, mezze platters, Dim Sum, food truck hopping, or a food hall safari. The acidity and freshness serve to refresh the palate and enhance every bite.
